Just stuff...

Not a lot going on, but I wanted to update my stats and just a stats update seems boring so I figured I'd add more boring stuff to it!

I was fairly busy in the kitchen yesterday.  I made whole wheat pancakes and got them in the freezer so I'm set for about 2 weeks.  I chopped peppers and onions for breakfast burritos, so that's ready to grab and go.  I finally made the chicken tomato chowder that I have been craving.  I have some for lunch today and I'll need to freeze those left overs.  Finally, I made sausage sandwiches for dinner.  I used sweet italian style turkey sausage instead of pork sausage.  It was pretty good!  Also, I tried a new smoothie flavor - peach caramel.  I was cleaning out the fridge and found a bottle of ice cream topping.  It's the same basic recipe as my strawberry smoothie but I used frozen peaches instead of strawberries and added a squirt of the caramel topping.  I liked it, but my wife didn't.  I should pick up some chocolate syrup to add into my strawberry smoothie...

As my wife and I eat healthier, we find that we are rapidly running out of freezer space.  It's become a challenge to squeeze everything in there.  We have a spare fridge in the basement, but neither of us thinks to use it that often and if we do, we tend to forget about the stuff that's down there.  I consider getting a freezer, but suspect the same thing would happen.  We just don't use our basement.  I've considered trying to find a small upright freezer to fit in some dead space under a peninsula counter but think it would look kind of tacky.  I've also thought about getting a better vacuum sealer and breaking down everything we get from the store and freezing it all individually.  I'm worried that doing it that way might make stacking things even more difficult...  As problems go, it's pretty minor, but you asked!  Well, really you didn't but you are still reading...

Anyway, I lost 1.6 pounds this week. 
On January 2nd I weighed in at 370.6 pounds
On March 11th I weighed in at 352 pounds

18.6 lbs lost so far.
